Introducing Emily



 
This is Emily. She is seven years old and this blog is about her cooking challenge at her Grandmother's House. She's just picked some cherry tomatoes from the veggie garden and is giving them a good rinse.

Her aim is to cook 20 recipes (with a little help if needed)
Two of her favourite meals are her Mum's Tuna Pasta and Macaroni Cheese.


Day One: Tuna and Cherry Tomato and Cheese Pasta

Ingredients:

A bowl of cherry tomatoes
A can of tuna fish in oil ( line caught )
1 packet of macaroni spirals
some cheddar cheese cut into small chunks

Method:

Rinse the cherry tomatoes well
Cut them in halves with a not too sharp small knife
Open a can of tuna with a can opener . Empty the tuna onto a paer towel to drain off some of the oil.
Chop some cheddar cheese into little chunks
Stir all of these through the pasta spirals which have been boiled to al dente ( i.e. not too soft and not too hard) for 12 minutes
Serve in individual bowls.

Day Two: Cheese Sauce

For  macaroni you need a cheese sauce. We found the perfect recipe in the NZ Herald on Sunday in a feature by Grant Allen . He posted Felicity's Grandmother's Cheese Sauce.

As he said: "Grandmothers often have a lot of tricks up their sleeve and this one is a winner. It's an excellent way to use up all the odds and ends of cheese that hang out in the cheese box, Grate them up and turn them into cheese sauce which can be used in many ways."

He uses them to fill little pastry cases to make a savoury snack, in lasagne, or to pour over some fresh fettucine.

And Emily uses it to stir through macaroni.

The recipe couldn't be simpler:

Ingredients:

1 egg (free range)
2 tablespoons of flour
1 cup of grated cheese
1 cup of milk
pinch of cayenne pepper ( we used black pepper instead)
1/2 teaspoon of English mustard powder

Combine all the ingredients in one saucepan and cook on a medium heat stirring constantly
Once thick set aside to cool

You can this use as a pasta sauce but you will need to make it a bit thinner
Add a little more milk once the sauce has cooked and whisk together until well combined
Serve with chopped parsley and extra grated cheese.
